100 yards up the narrow road  from my house ,  there is a tight sharp upward turn...and as the Sea grants the flotsum and jetsom to  beachcombers ,  that tight sharp upward turn gives me for a week or so,  every year all the potatoes I can eat. 
These potatoes come from the valley fields below , heaped high on the trailers and hauled by tractor up my road.
When the overloaded trailer takes the tight sharp upward Potatoe dividend pays .
But this time it was two very big sugar beets !
I know sheep and other animals eat them , also convert to sucrose and even ethanol...started to wonder if they were fit for human consumption '
 Google no help.
So into the kitchen.
 Got out my Chinese Chopper.
    Sliced and cubed one Beta vulgaris
microwave 14 minutes ...Good texture but too sweet!
Splashed in some Cider Vinegar ... and a little Worcester Sauce and mashed it up a bit. Good!.....Sweet and Sour ...Need some pork!
Should have a added some garlic.
Next sliced a la Julienne and microwave 14 minutes with Chili powder and vinegar...tasted like chili powder and vinegar but nice texture.
Now cubed and long boil in vinegar...will report.
So far it's the sweet/ sour only.
Will try combinations...Corn? like succotash.
... Swiss Chard? (bitter stuff)
And then Soups !
...Preserves?
 add to cold salads...All kinds of combinations and additions
Google not much help so far...more medicine than human nutrition.
I've eaten both of them.
must get more.
